
Pumpkin Seed Pesto (Vegan, Gluten-Free)
Ingredients
- Fresh basil leaves - 2 cups
- Pumpkin seeds (Or walnuts, cashews, hemp, or pine nuts) - 2/3 cup
- Garlic - 2-3 cloves
- Nutritional yeast (for parmesan cheese flavor) - 1 tablespoon
- Fresh lemon juice (for tangy sharpness) - 3 tablespoons
- Extra virgin olive oil - 1/4 cup
- Unprocessed salt and ground black pepper to taste - 1/2 teaspoon
Instructions
- Add all ingredients to a food processor. Process until smooth. This may take a few minutes.
- Stop to stir the sides, and process again until it reaches your perfect desired smooth texture.
- Enjoy!
